Ingredients

  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, diced
  • Extra strawberries for topping
  • Maple syrup for serving

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, beat together the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a slightly lumpy batter is fine.
  4. Gently fold in the diced strawberries.
  5. Heat a griddle or nonstick skillet over medium heat and lightly grease with butter or oil.
  6. Pour 1/4 cup of batter onto the griddle for each pancake. Cook for about 2-3 minutes on each side or until golden brown.
  7. Remove from the griddle and keep warm. Repeat with the remaining batter.
