Salmon Sushi Bake is a delightful combination of traditional sushi flavors and the comforting warmth of a baked casserole. With layers of sushi rice, creamy salmon topping, and furikake seasoning, this dish is both versatile and crowd-pleasing. Perfect for sushi lovers and casserole enthusiasts alike, it’s a fun, easy-to-make dish for family dinners or potlucks.


Ingredients

  • 2 cups cooked sushi rice
  • 2 tablespoons rice vinegar
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1 lb cooked salmon, flaked
  • 1/4 cup mayonnaise
  • 1/4 cup cream cheese, softened
  • 1 tablespoon sriracha (optional for spice)
  • 2 tablespoons soy sauce
  • 1/4 cup furikake (Japanese seasoning mix)
  • 1 avocado, sliced
  • 1/4 cup green onions, chopped
  • Seaweed sheets (nori), for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix rice vinegar, sugar, and salt. Drizzle this mixture over the cooked sushi rice and gently stir to combine. Set aside.
  3. In a mixing bowl, combine flaked salmon, mayonnaise, softened cream cheese, soy sauce, and sriracha (if using). Mix until creamy and evenly blended.
  4. Spread the sushi rice evenly in a 9×9-inch baking dish.
  5. Sprinkle a generous layer of furikake seasoning over the rice.
  6. Spread the creamy salmon mixture evenly on top of the rice layer.
  7. Bake in the preheated oven for 15-20 minutes, or until bubbly and lightly golden on top.
  8. Remove from the oven and garnish with sliced avocado and chopped green onions.
  9. Serve hot with nori sheets on the side for scooping, sushi-style.
