- Heat olive oil in a dutch oven over medium heat. Add ground beef, onion, and garlic; cook until the beef browns.
- Stir in carrots and celery, sautéing for 6-8 minutes until slightly softened.
- Add Italian seasoning and bay leaf, stirring for 1-2 minutes to release the flavors.
- Toss in the diced potatoes, then pour in the beef broth, diced tomatoes (with juice), tomato soup, and tomato paste.
- Stir in Worcestershire sauce for a tangy depth.
- Add the green beans and corn, then bring the soup to a boil. Reduce heat, cover, and simmer for 35-40 minutes until vegetables are tender.
