Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 2 cans (14 oz each) artichoke hearts, drained and chopped
  • 1 large potato, peeled and diced
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until softened, about 3 minutes.
  2. Pour in the vegetable broth, add the artichokes and diced potato. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the potatoes are tender.
  3. Use an immersion blender or transfer the soup to a blender in batches, blending until smooth.
  4. Stir in the heavy cream and season with salt and pepper to taste. Heat for an additional 5 minutes, stirring occasionally.
  5. Garnish with fresh parsley and serve hot.
