    • 2 chicken breasts, sliced into thin strips
    • 2 tablespoons corn oil (or any high smoke-point oil)
    • 3 cloves garlic, minced
    • 1 tablespoon fresh ginger, minced
    • 1 red bell pepper, sliced into thin strips
    • 1 cup broccoli florets
    • 2 tablespoons soy sauce
    • Salt and pepper to taste
  • Optional Add-ins:
    • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening the sauce)
    • 1 carrot, julienned
    • 1 cup snap peas
    • 2 tablespoons oyster sauce or hoisin sauce (for additional depth of flavor)

Instructions

1. Marinate the Chicken:

  • Combine 1 tablespoon soy sauce, a pinch of salt, and pepper in a bowl.
  • Marinate chicken strips for at least 15 minutes.

2. Prepare Vegetables:

  • Slice red bell pepper, chop broccoli into florets, and julienne optional vegetables (carrot, snap peas).
  • Mince garlic and ginger.

3. Heat Oil:

  • Heat oil in a wok or large skillet over high heat until shimmering.

4. Cook Aromatics:

  • Add garlic and ginger, stir-frying for 30 seconds until fragrant.

5. Cook Chicken:

  • Add chicken to the wok, spread it out for maximum contact, and sear for 1 minute.
  • Stir-fry for 3–4 minutes until cooked through.

6. Add Vegetables:

  • Toss in broccoli and red bell peppers, stir-frying for 3–4 minutes until crisp-tender.
  • Include optional vegetables like carrots or snap peas at this stage.

7. Add Sauce:

  • Pour in remaining soy sauce and optional oyster or hoisin sauce.
  • Stir to coat all ingredients evenly.
  • Add cornstarch slurry (optional) and simmer for 1 minute for a thicker sauce.

8. Adjust Seasoning and Serve:

  • Season with salt and pepper to taste.
  • Remove from heat and serve over steamed rice or noodles.
  • Garnish with sesame seeds or scallions for added flavor.
