  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken: Season chicken breasts with salt and pepper on both sides. Let rest for 10 minutes to allow flavors to penetrate.
  2. Heat the Pan: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until hot but not smoking.
  3. Sear the Chicken: Cook chicken breasts for about 6-7 minutes per side until golden brown and almost fully cooked. Remove from the pan and set aside.
  4. Sauté the Garlic: Add remaining olive oil and minced garlic to the pan. Sauté for 1-2 minutes until fragrant and golden.
  5. Deglaze with Balsamic: Pour balsamic vinegar into the pan, stirring to deglaze. Cook for 2-3 minutes to let it reduce slightly.
  6. Create the Sauce: Stir in honey (if using) and chicken broth. Simmer for 3-5 minutes to thicken the sauce.
  7. Return Chicken to Pan: Add chicken back to the pan and spoon sauce over the breasts. Simmer for 5 minutes to finish cooking and infuse flavors.
  8. Finish with Herbs: Sprinkle thyme over the chicken and garnish with fresh parsley, if desired.
