Ingredients

  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 15 oz can black beans, drained
  • 15 oz can red kidney beans, drained
  • 14.5 oz can diced tomatoes
  • 1/2 cup corn kernels
  • 1 1/2 cups Mexican blend shredded cheese
  • 1 cup rice, cooked
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Tortilla chips, for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat. Sauté the onion and garlic until the onion becomes translucent, about 2-3 minutes.
  3. Add the ground beef and cook until browned. Drain any excess fat.
  4. Stir in taco seasoning, diced tomatoes, black beans, kidney beans, and corn. Cook for 5-7 minutes until heated through.
  5. Spread cooked rice evenly in a baking dish. Pour the beef and bean mixture over the rice.
  6. Spread sour cream over the beef mixture, then top with shredded cheese.
  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let cool slightly. Garnish with green onions.
  9. Serve with tortilla chips for scooping.
