  • 8 ounces Mexican chorizo, casings removed
  • 2 medium potatoes, peeled and diced

  • 1 tablespoon olive oil or vegetable oil
  • 1/2 cup shredded cheese (Cheddar, Monterey Jack, or your favorite)
  • 4 large flour tortillas
  • Optional toppings: salsa, avocado, sour cream, hot sauce, chopped cilantro

Instructions

  1. Cook the Chorizo: Heat a large skillet over medium heat and cook the chorizo, breaking it into small pieces until browned (5–7 minutes). Transfer to a plate lined with paper towels to drain excess grease.
  2. Cook the Potatoes: Using the same skillet, add diced potatoes with a little oil if needed. Stir occasionally and cook until golden and crispy on the outside, tender inside (10–12 minutes). Season with salt and pepper and set aside with the chorizo.
  3. Prepare the Eggs: In a bowl, whisk together eggs, milk, salt, and pepper. Heat a small amount of oil in the skillet over medium heat, pour the egg mixture, and cook while stirring gently until the eggs are soft and set. Avoid overcooking.
  4. Assemble the Burritos: Warm the tortillas in a dry skillet or microwave. Layer chorizo, potatoes, and scrambled eggs evenly on each tortilla. Sprinkle with shredded cheese and add any desired toppings like salsa, avocado, or sour cream.
